just wondering what would happen if i leave my car insurance documents in the car and it gets stolen? would they be able to do anything with my insurance details?

You insurance card is supposed to be left in the car. It doesn’t have any of your personal information so it’s of no use to a thief. All it has is the insurance company name, your policy number, and a description of the car. If you have anything more than the insurance card in the car, like your policy, remove it. It doesn’t need to be there.
